The following dish calls for a simple base of curry powder fried with tomatoes and onions, with a bit of milk added to the sauce. It is important that you purchase the right tofu for this dish. The correct tofu is not the Japanese style of tofu which is silky and soft, as this kind of tofu will simply fall apart as you add it to the curry sauce and will make you curry appear like a pudding. The correct type of tofu is the Thai tofu that is the consistency of fresh cheese, as it will hold its consistency when you cut it and will be the perfect addition to your dish.
Ingredients -
1 pound of sweet potatoes
1 pound of pumpkin
½ pound of tofu
5 large tomatoes
2 onions
3 cloves of garlic
3 tablespoons of curry powder
2 cups of milk
Salt and pepper, to taste
Preparation:
To begin the preparation of this dish, you will need to chop the pumpkin and sweet potatoes into cubes. You will need to cut the rind from the pumpkin and the peels from the sweet potatoes. Dice the onions, garlic, and tomatoes as well.
Place a large skillet to heat on the fire, and fry the garlic in olive oil until browned. Add the onions, and cook until transparent. Place the tomatoes in the pan, and cook them for a few minutes. Add the curry powder, and fry it for 10 minutes. Let the ingredients cook until they become a thick sauce.
Add the milk, sweet potatoes, and pumpkin, and leave the mixture to cook for 1 and a half hours.
Chop the tofu into small cubes, and let it sit to one side until the recommended time has passed. Add salt and pepper to taste, and add the cubes of tofu to cook for 10 minutes.
